Strawberry Cobbler

1 container of diced strawberries

Sugar to coat


1 1/2 cup GF flour (I used Pamela's Baking & Pancake Mix)

2 tsp baking powder

1/2 tsp salt

1/2 cup sugar

1 cup warmed milk

1/2 tsp vanilla extract

8 tbsp melted butter


  1. Preheat oven to 375 degrees

  2. Combine diced strawberries and sugar, mix until strawberries are evenly coated in sugar

  3. In a large bowl, whisk together flour, baking powder, salt and sugar

  4. Add in warmed milk, vanilla and melted butter

  5. Stir until combined, do not over stir

  6. Pour batter into a baking dish and place the strawberry mixture on top, DO NOT STIR

  7. Bake for 30-35 minutes or until golden- watch carefully!


This is a great gluten free dish to bring to any summer gathering, but especially 4th of July! It is very festive with all of the red from the strawberries. I love this dish because it is so sweet and refreshing for the summer time. I have brought this to family gatherings where no one is gluten free, but the only things that gave it away was that I was eating. They LOVED this dessert! Throw some vanilla ice cream on it and you have the most perfect strawberry deliciousness perfection dessert.
