Lemon Raspberry Blondies

Blondies
2 sticks of room temperature butter
3/4 cup of sugar
1 egg
1/4 cup freshly squeezed lemon juice (About 2 lemons)
2 1/4 cups GF flour (I used King Arthur)
1/2 tsp baking powder
1/2 tsp salt
1 container of raspberries
Icing
1 cup powdered sugar
2 tbsp freshly squeezed lemon juice (Use the left over of the 2 lemons)
Set your oven to 350 degrees
Using a mixture, cream the butter and sugar until it becomes a fluffy consistency, then beat in the egg. Add in lemon juice once the egg is combined
In a separate bowl, combine the flour, baking powder and salt
Add your dry ingredients into the wet ingredients little by little until you get a thick dough consistency
Fold in your raspberries using a spatula
Spray a small baking sheet and pour in your dough
Bake for about 30 minutes
For the icing, whisk together the powdered sugar and lemon juice, then drizzle on top of the blondies
Talk about the perfect summertime dessert! I LOVE this recipe! The lemon and raspberries really pair well together and give you that amazing sweet and tart taste. The blondie consistency is pretty thick, so if you like a thin, airy type of dessert, this is not the one for you. I was happy with how the consistency turned out and it's thanks to my favorite flour, King Arthur. If you don't have this flour stocked in your pantry, I highly recommend getting it. It never disappoints! Lastly, the icing is just the creme de la creme of this dessert and the perfect topping. I was really happy with how everything turned out and would not change 1 thing about it!
