4th of July Cookie Cake

Sugar Cookie

2 3/4 cups of GF flour (I used King Arthur)

1 tsp baking soda

1/2 tsp baking powder

2 sticks softened butter

1 1/2 cups sugar

1 egg

1 tsp vanilla


Frosting

2 sticks softened butter

8 oz softened cream cheese

1 1/2 cups powdered sugar

2 tsp vanilla


Toppings

1 package of strawberries

1 package of blueberries


  1. In a bowl, combine flour, baking soda and baking powder

  2. Using a mixer, cream together butter and sugar

  3. While it is still mixing, add in egg and vanilla

  4. Once wet ingredients are well combined, add in dry ingredient a little at a time

  5. A thick dough should form and you will place it on a sprayed baking sheet

  6. Using your hands, form the dough to fit the entire baking sheet

  7. Place in the oven for 8-10 minutes at 375 degrees


  1. Using a mixer, mix together the butter and cream cheese, then add in vanilla, and then powdered sugar until a cream consistency forms

  2. Cut up each strawberry into thirds


  1. Once sugar cookie has completely cooled, spread the cream cheese frosting along the top evenly

  2. Place the blueberries in the left corner to resemble the blue part of the American flag, and place the strawberries in rows to resemble the stripes of the flag


Every 4th of July my family hosted the pool party and my favorite things my mom would make is this recipe. I mean what's not to love about a sugar cookie, cream cheese frosting and fruit!? I have never made a gluten free sugar cookie before and I was extremely pleased with how this recipe turned out. The dough was thick and stayed together very well forming the perfect cookie. My cream cheese frosting was a little lumpy, but that was from over mixing, so make sure you watch out for that! Since this is a large cake, there's no way my husband and I could eat it by ourselves, so I sent it off with him to an event he had. When he came home, he said it had been devoured before he could even go get a piece. That just goes to show you that anyone will love this gluten free recipe!
