Broccoli Cheddar Soup

4 cups broccoli florets

1/2 yellow or whiteAZ onion

4 cups chicken stock

1 tsp salt & pepper

3 tbsp butter

1/3 cup GF all purpose flour

1 cup half and half

2 cups shredded cheddar cheese


  1. Cut up the broccoli into smaller pieces and dice the onion

  2. Combine broccoli, onion, chicken stock, salt and pepper in crock pot and cook on low for 4 hours

  3. Turn crockpot to low and let it sit for 4 hours

  4. In a saucepan, melt down butter and slowly whisk in flour

  5. Add in a cup of the liquid from crockpot slowly into the saucepan

  6. Once combined, stir in the half and half slowly

  7. Add the shredded cheese in and combine until it is melted in to the mixture

  8. Add the cheese mixture into the crockpot and mix together until well combined

  9. Let it sit for another 5-10 minutes


Not only do I love this recipe because it tastes like authentic Panera broccoli cheddar soup, but it is so simple. I always love being able to throw something in my crockpot and letting it do the work for me. There is very little prep and work that you have to do, and who doesn’t love that!? This soup recipe tastes AMAZING and could easily compete with Panera. Like I said earlier, it tastes authentic and you wouldn’t even know that it’s gluten free.
