Fried Jalapeño Poppers

5-10 whole jalapeños

8 oz of soften or whipped cream cheese

Shredded Colby jack cheese to taste

Bacon bits to taste

1 cup GF flour (I used King Arthur)

2 whisked eggs

1 cup GF panko bread crumbs (I used the Kroger brand)

Frying oil

  1. Cut off the tops of your jalapeños and use a fork to scoop out the insides

  2. Combine your cream cheese, shredded cheese and bacon into a bowl and mix well

  3. Put a piping bag or ziplock bag into a tall cup and scoop your cream cheese mixture into it

  4. Pull out the piping bag and cut off the tip to squeeze the cream cheese mixture into the hallowed out jalapeños

  5. Set the jalapeños into the freezer for about 20 minutes

  6. Once they have hardened, cut them into smaller slices

  7. Individually place the jalapeño slice into the flour, then the eggs and then the panko bread crumbs

  8. Have your oil nice and hot on the stove, set the breaded jalapeños into the oil for about 1-2 minutes and then flip over

My husband and I LOVE jalapeños poppers. While those are a great football treat, they didn't seem Super Bowl enough for me. So, I took them to the next level and fried them. These are great for a Super Bowl party because they are bite size and easy to make a large batch. These turned out so yummy because they are creamy and cheesy on the inside, but have a nice crunch on the outside. Definitely dangerous though because they are bite size and I could sit there and eat 20 of them without thinking about it!
