Apple Fritters

Apple Fritter

1 1/2 cup GF flour (I used Pamela's Baking & Pancake Mix)

1/4 cup sugar

2 tsp baking powder

1/2 tsp salt

1 1/2 tsp cinnamon

1/3 cup milk

2 eggs

3 tbsp applesauce

2 Honey Crisp apples

Frying Oil

Glaze (Optional)

2 cups powdered sugar

1/4 cup milk

Dash of vanilla

  1. Whisk together flour, sugar, baking powder, salt and cinnamon

  2. Create a well in the center and add in milk, eggs and applesauce

  3. Whisk together both the dry and wet ingredients until well combined

  4. Peel and dice up the apples, and add those into the batter

  5. Mix together the apples and batter with a spoon until well combined

  6. Have oil over medium to high heat and use a 1/4 measuring cup to drop in the batter

  7. Once the side is browned (about 2 min), then flip it to the other side and put them on a paper towel to dry

  1. Whisk together the powdered sugar, milk and vanilla

  2. It will be a liquid consistency since it is a glaze, not a batter

  3. Pour over the apple fritters or completely dunk them in

Wow! Wow! Wow! These apple fritters SCREAM fall! I knew that these would be a hit before I even made them because the recipe was similar to the funnel cakes I made a couple weeks ago, and those were a 10/10. The added apple and cinnamon gave a ton more flavor which brought it to another level. The inside was so soft and moist, which can be difficult to achieve when cooking gluten free. These can be served up as a sweet treat for breakfast/brunch, or you can throw some vanilla ice cream and caramel on top, transforming it to a delicious dessert. There are a lot of ways to use these apple fritters, but all I know is that I am going to be making these a whole lot this fall season.
